Creamy Mashed Potatoes


Ingredients

3 pounds medium russet potatoes

1½ cups whole milk

4 tablespoons unsalted butter, at room temperature

Kosher salt


Preparation


Step 1

Heat oven to 450 degrees.


Step 2

Individually wrap potatoes in aluminum foil and arrange on a baking sheet. Roast until potatoes are very soft and don’t resist in the center when pierced with a knife, about 1 hour. Unwrap potatoes, halve lengthwise and let stand until just cool enough to handle (but still very warm), about 10 minutes. Peel off and discard skins.


Step 3

Rice potatoes through a food mill or ricer into a large deep skillet or pot. Add milk and butter, and stir over low heat until mashed potatoes are creamy and warmed through, about 3 minutes. Season with salt. Transfer to a serving bowl and serve warm.1½ cups whole milk

Homestyle Turkey, the Michigander Way




Ingredients


1 (12 pound) whole turkey

6 tablespoons butter, divided

4 cups warm water

3 tablespoons chicken bouillon

2 tablespoons dried parsley

2 tablespoons dried minced onion

2 tablespoons seasoning salt


Directions

Preheat oven to 350 degrees F (175 degrees C). Rinse and wash turkey. Discard the giblets, or add to pan if they are anyone's favorites.


Place turkey in a Dutch oven or roasting pan. Separate the skin over the breast to make little pockets. Put 3 tablespoons of the butter on both sides between the skin and breast meat. This makes for very juicy breast meat.


In a medium bowl, combine the water with the bouillon. Sprinkle in the parsley and minced onion. Pour over the top of the turkey. Sprinkle seasoning salt over the turkey.


Cover with foil, and bake in the preheated oven 3 1/2 to 4 hours, until the internal temperature of the turkey reaches 180 degrees F (80 degrees C). For the last 45 minutes or so, remove the foil so the turkey will brown nicely.



Green Bean Casserole




Ingredients

2 (14.5 ounce) cans green beans, drained

1 (10.5 ounce) can condensed cream of mushroom soup

1 cup shredded Cheddar cheese, divided

1 (6 ounce) can French-fried onions


Directions

Preheat the oven to 350 degrees F (175 degrees C).


Mix green beans and condensed soup together in a large microwave-safe bowl until well combined. Microwave on high until warm, 3 to 5 minutes.


Stir 1/2 cup Cheddar cheese into the green bean mixture. Microwave on high for 2 to 3 minutes.


Transfer mixture to a casserole dish and spread evenly over the bottom. Sprinkle remaining Cheddar over top, then sprinkle with the French-fried onions.


Bake in the preheated oven until cheese is melted and the onions are just turning brown, about 10 minutes.



Mom's Baked Macaroni and Cheese




Ingredients

1 (16 ounce) package macaroni

1 (10.75 ounce) can condensed Cheddar cheese soup

1 cup milk

1 pound shredded Colby cheese


Directions

Preheat the oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; then drain.


Place macaroni in a 2 quart casserole dish. Stir in cheese soup and milk until well combined. Sprinkle with shredded Colby.


Bake 25 to 30 minutes, or until cheese is brown and bubbly.


Sweet Holiday Baked Ham




Ingredients


1 cup maple syrup

1 cup orange juice

1 cup ginger ale

½ cup brown sugar

½ cup honey

1 (10 ounce) jar maraschino cherries, halved

1 (12 pound) fully-cooked, bone-in ham

1 large heat-resistant nylon oven bag (such as Reynolds Oven Bags)

1 (15.25 ounce) can pineapple slices in juice, drained

1 box round wooden toothpicks


Directions


Preheat the oven to 350 degrees F (175 degrees C).


Mix maple syrup, orange juice, ginger ale, brown sugar, and honey together in a medium bowl. Stir in juice from maraschino cherries, and 1/2 of the cherries.


Score the outer edge of the ham with a sharp knife in a diamond pattern. Cuts should be about 1/4 inch deep to allow the ham to soak up the juice.


Place ham into an oven bag, and carefully pour the juice mixture over it, keeping all of the juice in the bag (it may look like there is too much juice, but the ham will soak it up while baking).


Place pineapple slices on top of ham, and secure with toothpicks. Place cherries into the center of pineapple rings, and secure with toothpicks also. Tie the end of the bag closed with the ties provided, place in a large roasting pan, and cut a few small slits in the top of the oven bag.


Bake ham for 2 hours in the preheated oven. The internal temperature should be 140 degrees F (60 degrees C) when done. Be sure not to touch the bone when taking the temperature.


Remove ham from bag to a serving plate, and let stand for 10 minutes before carving.
